I was stuck on what to make for lunch today so I got creative. I knew I had some chickpeas so I decided to try making a salad. It turned out really good; I would totally make it again. Next time I would be less lazy and add diced veggies, like cucumber, peppers and maybe tomatoes. The veggies would also add a nice touch of colour.
Today’s lunch was perfect to throw in my purse and take with me to the beach for a lunch break walk.
1 cup chickpeas, drained and rinsed
1/2 can drained tuna
1 tbsp olive oil
1-2 tbsp lemon juice
cumin, crushed red pepper and salt to taste
Mix together and enjoy!
I ate my salad with some baby carrots for a nice filling lunch.
Total Calories (without baby carrots): 406 Calories
So lucky to work so close to the beach.
