I have been eating a lot of salads for lunch this week. They are easy. Plus I bought a HUGE bag of greens at Costco. Also, low in calories and healthy and GREEN! I always feel good when I eat green food.
greens, tomato, cucumber, steak, french dressing
greens, tomato, cucumber, tuna, homemade dressing (olive oil, balsamic, lemon juice, crushed red pepper and garlic)
greens, tomato, cucumber, orange bell pepper, pepperoni, homemade dressing (olive oil, balsamic, lemon juice, crushed red pepper and garlic)
What’s your favourite salad creation?
I bought some salmon burgers from Costco; I love mashing them up with some cream cheese after I cook them. Today I put it on top of cucumber like faux crackers. Yum!
Served it up with a side salad.

I was stuck on what to make for lunch today so I got creative. I knew I had some chickpeas so I decided to try making a salad. It turned out really good; I would totally make it again. Next time I would be less lazy and add diced veggies, like cucumber, peppers and maybe tomatoes. The veggies would also add a nice touch of colour.
Today’s lunch was perfect to throw in my purse and take with me to the beach for a lunch break walk.
1 cup chickpeas, drained and rinsed
1/2 can drained tuna
1 tbsp olive oil
1-2 tbsp lemon juice
cumin, crushed red pepper and salt to taste
Mix together and enjoy!
I ate my salad with some baby carrots for a nice filling lunch.

So lucky to work so close to the beach.
What a beautiful day!
Since the Taco Lettuce Wraps turn out so great I thought I would try another version. These ones were delicious too; perfect for a nice light, refreshing, summer lunch!
I took my lettuce leaves, spread avocado, topped it with tuna (mixed with cream cheese) and a few slices of cucumber. Perfect. Quick and easy too!
I used 7 romaine leaves, 1/2 an avocado, 1 can of tuna, 2 tbsp of cream cheese and 1/4 of a cucumber.

Look at me, blogging again – weeeee. Really struggling to stay on track so just trying to do everything I can. So tonight I was alone for dinner and decided to make a frozen Weight Watchers Meal – Smart Ones Santa Fe Style Beans and Rice. I put it on top of some spring mix and called it a salad.
This is something I do often for lunches at work.
