What’s for Dinner: Maple Salmon and Cucumber Salad

I really need to eat more salmon, it is so delicious and good for you. I love my salmon with cucumber salad!

Maple Salmon and Cucumber Salad

I baked my salmon in the oven with a little maple syrup, soy sauce, garlic seasoning, salt and pepper (I sort of follow this recipe). Cucumber salad is sliced cucumbers tossed with a vinegar dressing (1 part vinegar, 2 parts water, 1/2 part sugar, salt and pepper to taste). I also had some quinoa on the side, I cooked my quinoa in chicken broth hoping my husband would like it better… he didn’t. My husband said dinner was too healthy.
