A couple weeks ago I made the Grilled Chicken Bruschetta from Skinnytaste.com. Last night I decided to take the bruschetta, add some cucumber and put it on top of some greens with a steak. It turned out great. I am in love with that bruschetta recipe.
I chopped some tomato, cucumber, onion and mozzarella cheese. Mixed in olive oil, balsamic vinegar, garlic powder (had no fresh), salt and pepper. I put the bruschetta mix (it is still bruschetta with the addition of cucumber?) over some greens and topped with some grilled steak. I loved it. Hubby said dinner was too healthy again.
