I have been eating a lot of salads for lunch this week. They are easy. Plus I bought a HUGE bag of greens at Costco. Also, low in calories and healthy and GREEN! I always feel good when I eat green food.

What’s For Dinner: Beef and Broccoli Stir-Fry

The title is a bit of a lie, my stir-fry contains a little more than beef and broccoli but I usually use this Easy Beef and Broccoli Stir-Fry recipe because it is so good. I usually follow the recipe and add some carrots and peppers. This time I added some chicken as well because my piece of beef was a little small. I do not add the rice.

My toddler loves the beef before it hits the sauce. Frying it up in the cornstarch mixture makes it nice and tender, he usually gobbles it is… but he didn’t this time.

What’s for Dinner: Bruschetta Steak Salad

A couple weeks ago I made the Grilled Chicken Bruschetta from Skinnytaste.com. Last night I decided to take the bruschetta, add some cucumber and put it on top of some greens with a steak. It turned out great. I am in love with that bruschetta recipe.

Bruschetta Steak Salad

I chopped some tomato, cucumber, onion and mozzarella cheese. Mixed in olive oil, balsamic vinegar, garlic powder (had no fresh), salt and pepper. I put the bruschetta mix (it is still bruschetta with the addition of cucumber?) over some greens and topped with some grilled steak. I loved it. Hubby said dinner was too healthy again.

What’s for Dinner: Maple Salmon and Cucumber Salad

I really need to eat more salmon, it is so delicious and good for you. I love my salmon with cucumber salad!

Maple Salmon and Cucumber Salad

I baked my salmon in the oven with a little maple syrup, soy sauce, garlic seasoning, salt and pepper (I sort of follow this recipe). Cucumber salad is sliced cucumbers tossed with a vinegar dressing (1 part vinegar, 2 parts water, 1/2 part sugar, salt and pepper to taste). I also had some quinoa on the side, I cooked my quinoa in chicken broth hoping my husband would like it better… he didn’t. My husband said dinner was too healthy.

What’s for Lunch: Chickpea and Tuna Salad

I was stuck on what to make for lunch today so I got creative. I knew I had some chickpeas so I decided to try making a salad. It turned out really good; I would totally make it again. Next time I would be less lazy and add diced veggies, like cucumber, peppers and maybe tomatoes. The veggies would also add a nice touch of colour.

Today’s lunch was perfect to throw in my purse and take with me to the beach for a lunch break walk.

Chickpea and Tuna Salad

1 cup chickpeas, drained and rinsed
1/2 can drained tuna
1 tbsp olive oil
1-2 tbsp lemon juice
cumin, crushed red pepper and salt to taste

Mix together and enjoy!

I ate my salad with some baby carrots for a nice filling lunch.

So lucky to work so close to the beach.

What’s for Lunch: Avocado Tuna Lettuce Wraps

Since the Taco Lettuce Wraps turn out so great I thought I would try another version. These ones were delicious too; perfect for a nice light, refreshing, summer lunch!

Avocado Tuna Lettuce Wraps

I took my lettuce leaves, spread avocado, topped it with tuna (mixed with cream cheese) and a few slices of cucumber. Perfect. Quick and easy too!

I used 7 romaine leaves, 1/2 an avocado, 1 can of tuna, 2 tbsp of cream cheese and 1/4 of a cucumber.

What’s For Dinner: Baked Chicken Parmesan and Oven Roasted Cauliflower

This was delicious. I love Skinnytaste.com – so many great calorie friendly recipes. I often don’t follow the recipes exactly; sometimes I have to modify for what I have on hand but they always turn out great!

Tonight I made Baked Chicken Parmesan and Oven Roasted Cauliflower. These recipes went well together, they both needed the oven on 450° and both took about 20-25 minutes. Everything was ready at the same time. I served mine up with a side salad.
