Turkey Fajita Stir Fry Recipe

I wanted fajita’s but didn’t feel like buying wraps or pitas (they are expensive!) so I decided to try fajita filling with rice, pretty delicious! It was lacking a bit of spice, but we both enjoyed it for both dinner and and lunch the next day. It was nice and fresh without all the spice. Of course you don’t have to use turkey I just did because the grocery store had it pre-cut (I’m lazy!).

Turkey Fajita Stir Fry Recipe

5 servings

550 g turkey breast (approx)
1 tbsp olive oil
1-2 tsp garlic (I was lazy and used pre-chopped)
3/4 medium onion, sliced
1 medium green pepper, sliced
1 medium red pepper, sliced
1 1/2 cups corn (I used frozen)
1 tsp chili powder
2 tsp lemon juice

1. Heat olive oil and garlic in a pan on medium, add turkey and cook until meat is cooked through. While meat is cooking slice veggies.
2. Once is meat is cooked add onion, peppers, corn, chilli powder and lemon juice. Cook until veggies go soft, about 5 minutes.

I served my fajita stir fry over rice – calories extra – I would make this again, it was quick and easy. Next time I would play with the spices a bit or maybe try a sauce, but it really was good like this.
